Mini chocolate chip cookies
These delicious mini chocolate chip cookies are soft and chewy.

- 160 g soften salted butter
- ½ cup brown sugar 70g
- ½ cup white sugar 100g
- 1 teaspoon vanilla
- 1 egg room temp
- 1 ½ cup all-purpose flour
- 1 teaspoon baking powder
- ¾ cup chocolate chips
Preheat oven to 180°C / 360°F
Line 3 trays with silicon mats or parchment paper and set aside
Cream butter with brown and white sugar for 2 minutes
Add in egg and vanilla and beat for a further minute
Add in flour and baking powder and mix on low speed until just combined
Fold in chocolate chips
Scoop out dough¼ into ball, about 1 teaspoon of dough for each cookie
Place on baking trays. Add a few more chocolate chips on top if you like for looks.
Bake cookies for 8 -10 minutes
Allow to cool on baking tray for 5 minutes before transferring to a rack to cool.
Store at room temperature in an airtight container.
Freeze baked cookies- these cookies freeze well for up to 3 months.
If you are using unsalted butter add ¼ teaspoon of salt to your dough.
