This ultimate gooey chocolate fudge brownie recipe will make any day a little bit brighter.

This chocolate brownie recipe is super easy to make and only takes a few minutes to put all the ingredients together, then sit back and enjoy the lovely smell that will come from the oven.

You can’t beat a soft fudge chocolate brownie anytime of the day, my 6 year old son will eat it for breakfast if he thinks no one is looking.

Its a favourite in our house the kids love it in their school lunches. But it does have a lot of sugar in it.

Sometimes if I’m planning on making it to go in the school lunches for the week, I cut down the amount of sugar in it. (it never lasts the week as the children fine it and eat it any chance they can)

HOW TO MAKE MY BROWNIE FUDGY

To get a nice fudge brownie you need to have a high fat content to do this I use butter, oil and chocolate in my brownie.

You also need to have a higher fat to flour ratio to get a lovely moist gooey and dense brownie.

This chocolate brownie is super easy to make and you only need one bowl.

Start by melting the butter, oil and chocolate together. I do this in the microwave, but it can be done in a pot or over a double boiler.

Once butter mix is all melted together add the white and brown sugar, eggs and vanilla and mix well with a whisk or fork. The good thing about this recipe you do not need any electric mixer.

Then sift in the flour, salt and cocoa and mix until its all incorporated together with no flour lumps.

Line a baking tray with baking paper. I use a 20cm by 20cm pan to get a nice thick brownie. If you use a wider baking pan you will have to be aware that the cooking time may change slightly as the mix is spread over a bigger baking surface, it will not be as thick and will cook faster.

Cook in a pre-heated 170.c oven for around 30 -35 minutes

Let the brownie cool completely before slicing. I know this can be hard as it smells so good when it comes out of the oven.

Ingredients

  • 100 g Butter salted
  • 2 tablespoon cooking oil
  • ½ cup chocolate bits
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla essence
  • ½ cup all purpose flour
  • ¼ cup unsweetened cocoa powder

Instructions

  • Set oven to 170°c / 340°f fan bake
  • Line a 20 x 20 cm (8 x 8 inch) baking dish with baking paper
  • Add butter, oil and chocolate to a bowl and heat until all melted
  • Then add vanilla and eggs to the melted mixture and mix well
  • Next add white sugar and brown sugar to the bowl and mix.
  • Then sieve in the flour and cocoa powder and mix until it is all incorporated
  • OPTIONAL – fold in ½ cup of chocolate chips, nuts or fruit.
  • Pour in to pan and bake for 30 -35 minutes

Notes

If you use a larger baking pan you will need to reduce the cooking time.
