Lemon shortbread cookies

This soft delicate buttery cookie recipe is busting with a zesty fresh lemon flavor. These cookies are made with fresh lemon zest and juice which give them a bold fresh lemon flavor.

An easy to make recipe that is perfect for afternoon treat. Leave plain or drizzled with melted chocolate or a lemon glaze, and everyone from young and old will love these cookies.

Once cooled store these cookies in an airtight jar.

Lemon shortbread cookies

This recipe is straight forward and simple to make you only need 5 ingredients.

Recipe ingredients

Butter – salted butter. If you are using unsalted butter add a pinch of salt to this recipe

Sugar – icing sugar (powder sugar)

Flour – all-purpose

Corn flour / Cornstarch

lemon – use the juice and zest of the lemon

HOW TO MAKE THESE COOKIES

Cream your butter and sugar together until light and creamy.

Next add in your lemon juice and zest and continue to bet for 30 seconds.

Then add in the flour and corn flour and mix until all the flour is incorporated into the butter mix and your cookie dough comes together in a ball.

Roll out cookie dough and cut into desired shapes.

Bake for 15-20 at 160°c / 320°f.

Ingredients

  • 150g Butter salted
  • ½ cup Icing sugar
  • 1 ¼ cups Flour
  • ½ cup Cornstarch corn flour
  • 2 teaspoons Lemon zest
  • 2 tablespoons lemon juice 1 lemon

Instructions

  • Preheat oven to 160°C / 320°F.
  • Line a baking tray with baking paper or a silicone mat and set aside.
  • Cream butter and sugar together until light and creamy.
  • Add in lemon zest and lemon juices and continue to beat for another 30 seconds.
  • Next add in flour and cornstarch and mix on low speed (or by hand) until mix comes together into a ball.
  • Add a little flour to your bench and roll out cookie dough to 5mm thick. Then using a cookie cutter cut out cookies and place on a lined baking tray.
  • Bake for 15-20 at 160°c / 320°f.
  • Let sit for a minute then move to a cooling rack.

Notes

Leave plain or drizzled with melted chocolate or a lemon glaze.
