Spiced Fruit English Muffins
Spiced Fruit English Muffins
Spiced fruit English muffins are soft and delicious with a hint of spice and a sprinkling of sultanas.
My family love fruit English muffins they are a staple in our house for breakfast and snacks.
This recipe makes around 15-18 depending on how big you make your English muffins.
These English muffins freeze well and it is so convenient to just pull out of the freezer when you need then.
Making homemade English muffins are a lot cheaper option than buying store brought ones. Store brought English muffins can be very expensive for the small amount you get.
Making the spiced English muffin dough
I make my dough in a bread machine, but it can also be made with a stand mixer or by hand.
I like to add the dried fruit right at the start when I add all the other ingredients.
Bread Machine
Place all ingredients into your bread machine and set the dough setting then leave it to do its thing. My bread machine takes 1hour 30 minute. I like to add my dried fruit at the start but most bread machine have a timer that goes off after about 30 minutes of mixing to let you know to add your fruit which you can do but I find it doesn’t give it enough time to mix in well.
Stand Mixer
With a stand mixer place all ingredients in the bowl and using the dough attachment, turn the mixer on to the lowest speed for the first minute, once the dough has come together turn up to medium and let mix for 8 minutes. Cover bowl and let rest for 1 hour.
By Hand
Mixing by hand – add all ingredient to a larger bowl and mix with a wooden spoon, once it gets too hard to mix place your mix on to the bench and knead by hand for around 10 -12 minutes. Cover bowl and rest for 1 hour.
Shaping the spiced fruit English Muffins
Once your dough has doubled in size. (after about 1 hour) Flour your work surface and turn out your dough.
Roll out your dough until it is about 1 ½ cm think. With a round cookie cutter or cup chop out your English muffins. Place on a board for the second rise. Make sure to leave enough of a gap between each one so they can rise with out touching then cover and leave for 30 minutes.
Cooking your English muffins
Heat a prying pan or grill plate and cook the English muffins for one minute on each side or until golden brown, without using any oils or butter. Transfer the English muffins to an over tray and bake for 10- 15 minutes in a pre-heated 170°c oven. This will help cook the English muffins in the middle without the outside burning.
Split in half and toast to serve. Spread with a good helping of butter.
