Nectarine Cake

Simple nectarine cake - with its sweet nectarines, buttery sponge and cinnamon sugar topping, this summer cake will go down a treat.

Ingredients

  • 100 g butter salted
  • ½ cup sugar granulated
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup flour all-purpose
  • 1 teaspoon baking powder
  • 3-4 nectarines

Topping

  • 2 tablespoons sugar granulated
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 180°C / 350°F fan bake. Prepare a 22cm / 9-inch cake pan by spraying with cooking spray or line with baking paper.
  • In a large bowl cream butter and sugar together
  • Add eggs one at a time whisking in between each one
  • Add vanilla and whisk until all incorporated
  • Next add the flour and baking powder
  • Fold in dry ingredients until just mixed together – DO NOT OVER MIX
  • Add cake batter to your prepare cake pan and arrange sliced nectarines on top of cake mix

Topping

  • Mix together sugar and cinnamon and sprinkle over nectarines on top of cake
  • Bake for 30 - 35 minutes until golden on top and cake spring back
